Can't say I blame you - "The Trouble with Tribbles" was always my favorite episode.
AND Deep Space Nine revisted it in a time travel episode.
Their explanation for why Klingons look so different in the original Star Trek series was thus: It was an embarassing time in klingon history during which there was a lot of genetic experimentation to make Klingons look more human.
